Sweet Thai Chilli Sauce
A spicy tingle accompanies this tangy sauceâjust watch the chillies! Delicious served with grilled meats.
2 tablespoons oil
5-8 chilipadi, deseeded and diced
¾ cup (150 g) shaved gula melaka (palm sugar)
¼ cup (60 ml) fish sauce
¼ cup (60 ml) lime juice
3 tablespoons tamarind pulp mashed with 1½ cups (375 ml) water, strained to obtain juice
Heat the oil in a wok over high heat and stir-fry the chili padi until soft, about 2 minutes. Reduce the heat to low, add all the other ingredients, and simmer, stirring constantly, until the sauce thickens, about 10 minutes.
